Chicken Wild Rice Soup

Thank you to my friend, Julie, for this recipe! I made it for dinner tonight for Aiden, Tom and our friends and we weren't disappointed. It was relitively easy (as easy as dinner can be while entertaining a 2 year old) and really yummy. I served it with salad and bread and I heard no complaints.

Ingredients:
1 medium onion, chopped
2 celery ribs, diced
2 carrots, diced
1/2 cup butter or margarine
1/2 cup flour
4 cups turkey or chicken broth
2 cups cooked wild rice (I used Rice A Roni Nature's Way Wild Rice, but Julie used Uncle Ben's Sun dried Tomato Wild rice - 1 pkg)
2 cups half and half
2 cups diced cooked chicken (Julie used turkey)
1 tsp. parsley flakes
1/2 tsp. salt
1/4 tsp. pepper

Directions:
(1) Open the package of Uncle Ben's wild rice and cook according to package directions. Set aside. (2) In a large kettle, saute onion, celery and carrots in butter/margarine until onion is transparent. Reduce heat.
(3) Blend in flour and cook until bubbly. Gradually add broth 1 cup at a time stirring constantly.
(4) Bring to a boil; boil for 1 minute.
(5) Reduce heat and add wild rice, half and half, turkey, parsley, salt and pepper.
(6) Simmer for 20 minutes..
(7) Serve hot with artisan bread.

 It's hard to believe that Aiden turns 18 in one week and walks through graduation in just one month. After more than a decade of homeschooling, 2 years of PSEO, and no less than one million moments that I'll treasure forever, my oldest will be an adult and graduated. Happy Birthday, Cade!

 My littlest is seven and it's hard  not to be sad. We couldn't be without him, and we're so glad he's ours.  At seven years old Cade loves to do what everyone else is doing. He will NOT play by himself, and maybe it's because he's used to having someone to entertain him all the time. He loves legos and soccer. He also loves to read. I am ALWAYS finding Cade trying to tackle reading a book he probably isn't quite ready for. Lately he's been trying to read The Hobbit. While he's able to read all the words, he just doesn't have the depth of understanding to read it independently quite yet. He LOVES Tom Sawyer so he was delighted to find an abridged version to read.  Cade makes up his own mind about things. He will NOT be bossed around. He holds his own, so I don't worry about his brothers pushing him over. Cade also won't be pushed over physically. He is one tough kid.
